Food Storage is Good For You: Canned Tomatoes

Hunt's Diced Tomatoes With Green Peppers, Celery And Onion, 14.5-Ounce Units (Pack of 12)When I started building up my food storage, I realized there were a few things I didn't really stock up on that I should, and canned diced tomatoes is one of them.  They are SO versatile.  You can use them to make a marinara sauce, or salsa or just put some on chicken and throw them in the oven.

I stock up on all the varieties.  About 1/2 of mine is plain, and then the other 1/2 is split between Italian or spicy (because that makes it even easier to add it to a recipe).

Also, these cans can be fairly expensive when not paired with a sale or a coupon, so I stock up when it's less than 75 cents, or at LEAST less than a dollar.  I keep about 20 cans on hand all the time.  Of course, when our tomato bushes are going crazy (like right now) I don't use very much of them, but they're a staple for me in the fall/winter months.

I was hoping to can some of my own after my big canning night but we have a whole ton of cherry tomatoes, and not so many of the large ones (and the larger ones would be better for canning because you have to peel them first, and that would be a huge pain on the tiny ones).

I also keep some stewed tomatoes (about 9 cans), tomato paste (12 cans) and crushed tomatoes (3 cans) on hand, but the majority of mine is diced tomatoes.

I have a sticky mozzarella pasta recipe, that uses canned tomatoes, I need to send it to you. Very yummy

That's a shame on only getting the cherry tomatoes. Truly a pain to can small ones. Better luck next year.
